Both mechanisms replace a leaving group with a nucleophile, but they get there differently. SN2 is a single concerted step: the nucleophile attacks as the leaving group departs.

Because the attack happens on the face opposite the leaving group, the stereocentre inverts. That's the Walden inversion. SN1 instead goes through a planar carbocation, so the nucleophile can add to either face and you get a racemic mixture.
